Ingredient of the Month: Rosehips!

The American Culinary Federation educates and promotes up-and-coming chefs, and is an influential force in teaching cooks how to use fresh ingredients to make memorable meals. We were thrilled to see the ACF highlight rosehips as the ingredient of the month!

ACF praised the berry’s high concentration of vitamins and minerals such as Vitamin C, Vitamin A and Vitamin K, and its longtime use as a medicinal treatment and health ingredient. The ACF also noted that rosehips have been used by ancient Chinese, Persian, Roman and Greek cultures, as well as Native Americans, who mashed the berries and fed them to children to support their health.

Rosehips have an important culinary legacy, too. They are often steeped with hot water to make healthy herbal tea, and the juice can be extracted to make delicious jams, jellies and other preserved foods such as compote.

They can also be candied and used in baked goods as a delicious and more complex tasting substitute for raisins or other dried fruit.

In Sweden, rosehips are used to make soup called Nyponosoppa and in Slovenia they’re used to make a soda called cockta. A brandy called palinka is made with rosehips, and it is popular in Hungary, Romania and other eastern European countries.

Rosehip Pomegranate Madras Cocktail

3 ounces vodka

6 ounces NADI Rosehip Pomegranate Drink

2 ounces freshly squeezed juice from oranges or clementines

Slices or orange or lime for garnish

Combine all ingredients in a shaker filled with ice. Shake vigorously for 30 seconds. Pour into lowball glasses or coupes, and garnish with a slice of orange or lime. Makes two cocktails.
